In 1997, Betty Yung assumed ownership, managing the restaurant while raising her four children. Her husband, Wood Yung, serves as the dedicated chef, with cousin David also providing assistance to the family operation.

The restaurant is widely recognized for its popular dishes, including sweet and sour pork and steak with black bean sauce. Its impressive longevity is attributed to a commitment to consistent quality, a steadfast approach that has endured amidst the evolving landscape of Melbourne's food culture.

Fong's embraces a traditional management approach, utilizing physical menus and hand-written orders. This contributes to a warm, familiar atmosphere where customers often feel comfortable assisting themselves.

Kingsland Chinese Restaurant: Boronia's Time Capsule

Approximately 30 kilometers east, in Boronia, Kingsland Chinese Restaurant has been operational since the 1970s. The Tran family acquired the restaurant in 1991, continuing its legacy.

Kevin Tran has dedicated over three decades to serving as the chef. His son, Graham Tran, now works full-time, diligently learning the intricacies of the business during his upbringing within the establishment, with the explicit objective of preserving the restaurant's unique legacy.

Kingsland is notable for its preserved interior design from the 1970s. This distinctive ambiance even served as a set for the popular TV series 'Neighbours.' The menu boasts 100 Cantonese dishes, with the combination bird's nest being a particular specialty. The restaurant consistently prioritizes the overall dining experience and a traditional service model.
